Pesto rice made with white rice, store-bought, onion, and a touch of lemon is a great side dish with fish or chicken.
1 tablespoon butter
1/2 cup finely chopped onion
1 1/2 cups dry long grain white rice
3 cups water
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (6- to 7-ounce) jar basil pesto
1 teaspoon lemon zest
lemon wedges
Gather all ingredients.
In a large saucepan over medium heat, melt butter. Add onion. Cook and stir 4 minutes.
Add rice. Cook and stir 1 minute to coat with butter and onion is tender.
Add water, salt and pepper. Increase heat to medium-high and bring to a boil. Cover and reduce heat to medium. Simmer 15 minutes until rice is tender and water is absorbed. Let stand, covered, for 5 minutes.
Fold in pesto and lemon zest until combined. Serve with lemon wedges.
