Matzo brei is a traditional Jewish breakfast dish made with matzo and scrambled eggs that everyone looks forward to eating during Passover. It's so comforting — it's great anytime! Use flavored matzo or add sautéed onion if you like, or serve with sugar, cinnamon, and applesauce for a sweet version.
1 matzo cracker
1 large egg
salt and pepper to taste
1 teaspoon butter or vegetable oil
Break matzo into pieces in a bowl; cover with hot water and soak until matzo just begins to soften, about 30 to 60 seconds. Drain and squeeze out water; set matzo aside.
Beat egg, salt, and pepper together in a small bowl until fluffy; mix in matzo.
Heat butter or oil in a skillet over medium heat; pour matzo-egg mixture into pan. Cook until egg is cooked on one side, about 1 minute; flip and cook on other side, about 1 minute more.
