This apple zucchini bread is fluffy and light. Cinnamon and walnuts add a lovely flavor and crunch to this easy quick bread.
4 large eggs
1 cup white sugar
1 cup brown sugar
½ cup vegetable oil
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 ½ teaspoons baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ cup chopped walnuts
2 cups peeled, chopped zucchini
1 cup chopped, peeled apple
Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
Combine eggs, white sugar, brown sugar, oil, and vanilla in a large bowl until well blended. Combine flour, baking soda, salt, and cinnamon in a separate bowl. Stir flour mixture into egg mixture; fold in walnuts, zucchini, and apple. Pour into prepared pans.
Bake in the preheated oven until top springs back when touched lightly in center, about 1 hour. Let cool in pans 10 minutes before removing to wire rack to cool completely.
